When playing in the arena, why would someone post a deck with an HP lower than 100? I just had a match when the opponent had 1hp starting out.

HP decays as an arena deck ages.

The maximum that you, yourself can insert is 60.  However, keep in mind that the Arena skill "Dexterity" doubles the size of your deck, meaning your deck could hold as many as 120 cards.

Oni's answer is da best. 4.5k/round. Possibly more with new rules, i'd go up to 9k in later rounds.

Sometimes, I gain twice the amount of gold for beating an opponent in the arena, just like with elemental master - but I didn't have full HP left. Why is that?

You probably beat a deck in the top 10. #1 gives you as much as 10x the normal reward. (Maybe a little less.)

Taking these from xeno's wiki article.
"However, if the deck is rank 4-9, bonus is doubled.
If the deck is rank 3, bonus is multiplied by 6.
If the deck is rank 2, bonus is multiplied by 8.
If the deck is rank 1, bonus is multiplied by 10."
