Ivory isn't a gem/stone, but it's as close as Death gets to having one (and it's fairly suitable, too).  It's considered an organic gemstone.

Anyway, this is a clever observation.  I'd always sort of had this vague notion that each element had a specific gemstone associated with it, but I never really consciously thought about it. 

Maybe...
Gravity - Sapphire
Light - Gold

Looks like Time, Aether, and Air need gems, too.  :(

If you want to match the gems by its colour, this (http://www.gemselect.com/gem-info/gems-by-color.php) might be helpful. But there are gems that can have multiple colours. e.g. topaz - there are yellow and blue.

 :death i like the ivory idea since an elephant has to die for ivory (which is sad :( )

 :gravity not sure, but something carbonish is good since it shows synergy with earth and it can be different which also reflects gravity's versatility :)
