Having the Wings shield equiped should make your weapon airborn. Using web on a player should destroy Wings.

The problem with this is that it doesn't seem to be the main function of shields.  They're meant to be defensive, not adding another angle of attack.

Also, flavor-wise, flying weapon actually makes the weapon itself fly.  Wings makes you fly, but you can still only hold one weapon.

It would make sense that if both players have wings shields that they can hit each other with melee weapons

Pretty much this. Also, for your other suggestion:
Thematically: Yeah, a web can hold down a bird or even a dragon, but can an elemental REALLY get pinned down by a simple web?
Mechanically: Having Wings in play isn't equal to having the Airborne passive.

Yeah, not too many people use wings because it is very uncertain how useful the wings will be, and making web able to destroy wings would just make it even more of a gamble. Still though, I think that having wings should make your weapon airborn.

Don't go down the road of "logic" of card abilities, one can argue forever about what shouldn't be possible or should be possible based of this or that assumption, its just fail all around.

This is true, but not how the game works mechanically.  I would support the idea if it simply gave your weapon the airborne passive effect, but kept it in your weapon slot.
