How exactly does the effect stack if you have multiples on the field?

Probably an important point to cover. They wont stack. The first Grimoire card you put in play will get all of the counters. If you have two in play the second will sit there with zero counters until the first is destroyed.

Hmmm...though another idea might be to make it a shield. Then you could only have one in play anyways. A shield that only heals and doesn't defend?

Of your examples, only Shard of Gratitude actually heals. The other two cards only add to your maximum life and would therefore not be affected. SoG would heal you for 7 with this card.

Well I suppose it wouldn't due to the cards effects. If you wanted to get fancy you could have it add on the extra health (perhaps as a temporary increase, not an increase to maximum health?) or even just make the spell refill life to max instead of max -1.
