I have Mighty, and YoungSot has Brave.
If I choose not to use any of my upgraded cards in my matches, will YoungSot still win the match after one fewer victory?

I'm afraid yes. Otherwise voluntarily reducing your upgrades to match your opponent's will result in nullifying (or transforming) Brave's effect, which is not the intention here.
