Actually, I'm in the middle of FFI myself at the moment, around the Earth Cave first trip (love that music).  My party:

Will - Fighter
Jack - Red Mage
Kate - White Mage
Gray - Black Mage

Having a Red Mage in there allows me to stack two spells of a color when needed... Ninja may be powerful but I've always liked more magic users!  :D

Mix in Final Fantasy V is really amazing, more so than Rikku's Overdrive since it can be spammed.  Here are some of the cooler combinations:
Kiss of Life - revive with half HP, full MP (Maiden's Kiss + Phoenix Down)
Ether Dry - four times as good as an Ether (Hi-Potion + Turtle Shell)
Split Shell - halve enemy defense (Antidote + Turtle Shell)
Giant Drink - double maximum HP (Elixir + Dragon Fang)
Dragon Armor - boosts defense and magic defense (Phoenix Down + Dragon Fang)
Kiss of Blessing - Berserk, Haste, and Image (Holy Water + Maiden's Kiss)
Elemental Power - +50% magic damage (Holy Water + Eyedrop)
Dragon Power - Level +20 (Potion + Dragon Fang)
Life Shield - resist instant-death (Holy Water + Phoenix Down)
Shadow Flare - massive non-elemental (Dark Matter + Dark Matter)

All except Turtle Shell, Dragon Fang, and Dark Matter are available at shops, Elixir is the only costly item.  Turtle Shell and Dragon Fang are guaranteed drops from turtles and dragons, respectively, so easy to farm.

I know for sure FF I and II are on Nes but I'm not sure which other ones are on NES or SNES (I get the games for them confused because they are both so awesome).

NES: I, II(j), III(j)
SNES: II(u), III(u), IV(j), V, VI(j)
PSX: VII, VIII, IX
PS2: X, X-2, XII
PS3: XIII

II(u) and IV(j) are the same game, the one with Cecil and Kain.
III(u) and VI(j) are the same game, the one with Terra, Celes, Locke.

II(j) and III(j) were only released in Japan originally and have no official Western designation, though II(j) at least is available on GBA, packaged with I as Dawn of Souls.

If you want the original experience, I recommend against Dawn of Souls - it introduced a LOT of radical gameplay changes, including the switch from spell charges to actual MP in FFI, which ruins most of the strategy in using spellcasters.

You can play NES with nothing more than a browser, now.  :)  SNES... not yet.

Final Fantasy 1 was the first game I remember salivating over, because of all the previews in Nintendo Power.  I could beat Mega Man 2 in an hour.  I find it harder to do with a keyboard (or else I am less coordinated now).  Ice Hockey was my favorite multiplayer.  I could get close to the end, but could never beat Zelda 2 or TMNT.

I miss my NES. Definitely one of the best consoles ever. Then the SNES came out and blew it out of the water. To this date, I don't think there is anything that truly beats out the awesomeness of the SNES.
Cue to the eff to the tee. For realzies.

Seriously though, I have never seen a console with as many high-quality games as the SNES. Not only were the games amazing when they were brand new (FFIII blew my mind), but most of them have what seems like never-ending replay value (case-in-point: current SNES emulator popularity). The console itself is resilient to wear, and the controllers are arguably more ergonomic than anything out there. I love me some Nintendo, for sure, but the SNES rocked my world. :)
No doubt.  Zelda, Metroid, Chrono Trigger, Mario Kart, the list goes on...
