If spellcasting starts at 12pm, but the thread opens at 3pm, does it close at 12pm the next day or 3pm?

Spell casting doesn't last 24 hours. It last right around 36 hours I believe. And it ends 36 hours after it opens. I always adjust the countdown since I'm usually not around when the thread is supposed to be open so that it lasts the full 36 hours.

Can you obliviate a match that never happened (but a winner decided)? I assume so, but I want to make sure since it'll most likely happen after the round ends.

Also, what happens when someone sends two spells against you when you have protego. Both blocked? First one listed blocked? If someone else casts a spell towards the protego user but it has already been directed at someone else, does it block if it blocks more than two spells?

It blocks one spell, the first cast against you. If you want to block more, you need multiple defense spells. If you have multiple defense spells, you can choose which one activates when a spell is used on you.

So that means that only the first spell that calindu directed towards DM was reflected?
