There's a list of abilities that mutants can get here: http://elementsthegame.wikia.com/wiki/Mutant
Abilities you cannot get would be anything not on that list (though Devourers get to keep their quanta drain and Graboids are burrowed by default).
Not entirely sure the bit about base critters you can't get is still correct, but everything else should be.

I love it when you mutate a nymph, reverse it into your hand and play it again for its original skills.

Say you mutate a golden nymph 6/8 with burrow. You can use "reverse time" from your eternity to put it back into your hand. if you have an hourglass, you hasten it into your hand and play it for the original cost (9 time). it has the regular skills of a Golden nymph (pre-cog). I also do this with poisoned creatures and creatures I don't want gravity pulled. It cures lobotomize as well.

my favorite i got was a 10/11 golden nymph with da ja vu  cost 1 :time and it turned into a 10/12 golden nymph with ablaze ;D

I was forced to play my otugh without quintessence when I was playing Chaos Lord. He then proceeded to mutate it into a 12/12 Phase Dragon with devour :D

A nymph with devour O_O wonder what that looks like in real life, yuck, anyway, probably a photon with what was it...Growth? lets just say, it is a hella lot bigger then a photon at the end :P

i mutated Destiny's critter into a devourer with steal (1 darkness quantum/per cast)
then i say to myself: doesnt matter, u dun have any black quantum...
after 2 rounds, my hourglass got stolen
me: WTF!!!
then i realized the devourer ate my quantum and convert it to darkness quantum, so destiny can cast steal...

a photon with growth? it becomes a nucleus :p
