Emotions could be defined in any number of ways, but I'd rather keep it vague for now. So if you don't believe some of the following can be considered emotions, please dispute. Also, some of these may overlap.
Aether...is a tough one. Higs had some ideas so I'll wait for her say.
Air is a no-brainer for me. Fickleness or Spontaneity -- the sky is the limit and all that. I think "spontaneity" might be a better fit because it's a more "neutral" term -- it can mean a good thing (inspiration) or a bad thing (lack of planning, etc.). I think Sky Blitz and the Dive abilities fit this rather well -- it's a sudden (spontaneous) one-turn-only move that doubles your ATK. I'm going to be using that word (spontaneity) a lot. You've been warned.
Darkness...I'd rather avoid negative emotions if possible, but let's say Fear for now. Our ancestors were afraid of the dark, because of the predators (or ghosts/demons/vampires/whatever). That or Ignorance (if something is covered with darkness, you're ignorant of what's in it). Fits this line from the game:
"Darkness elementals are masters of subtlety; they can hide, absorb energies and manage the creatures that dwell in the shadows."
Death is another tough one, but some people in chat came up with very good ideas, namely Greed, Spite, or Patience. Greed because it "hoards"...all things eventually die after all. Spite is more of an emotion than greed though, and could fit with the personification of Death. Eventually it gets its way. But IMO Patience is the strongest relation to Death -- it's a patient hunter, sitting calmly and waiting for everything in the world to eventually become its subjects. Death rushes notwithstanding, I think a lot of Death cards by themselves are more of the stall types (BoneWall, Boneyard, Vulture, Soul Catcher) at least because of how slow their abilities take.
Earth...now this could either be Patience as well, or Stubbornness. Earth endures, and so do a lot of its cards -- Stone Skin being one. That or Protectiveness, which can be either good or bad -- protective of your loved ones, or protectiveness of your own mind -- aka narrowmindedness. Protect Artifact, BB, and Auburn Nymph fit this description.
Entropy is another Spontaneity element IMO. It fits with its often fast deck types -- Nova/Supernova personifies this. But I feel like a lot of people will go with the more obvious Chaos/Randomness, though I'd argue Spontaneity is a more neutral way of calling it that.
Fire...Passion. Easy one IMO. Passion can be good or bad (the bad side being EtG's very own Rage Elixir which reduces HP). It's also often (wait for it)
spontaneous, aka its fast cards like Immolation.
Gravity. Now this I had a lot of ideas for. Patience for one, but Detachment was more thematically close to gravity. It's always just doing its own thing, no matter what happens around it. But Higs pointed out that this wasn't related to Elements but rather real life, so here goes.
Gravity can be either fast (Momentum/Charger/Titan) or slow (Armagio/GP/Catapult), which someone pointed out in chat. The fast aspect I believe could be related to Determination, which can (like many of my examples) be good or bad (aka Stubbornness). The slow aspect could be Patience once again, or like I prefer, Detachment. I'll decide which later.
Life -- someone said it was eagerness. It could also be Passion, or Love. No big arguments for this really, I'll wait for what others have to say.
Light in Elements is sort of a "leave me alone"-type element. Sanctuary, Miracle, Angel...most notably, almost all of Light's cards have to do with affecting its own side of the field (save for Holy Flash). That could be seen as apathetic, but I could argue it's the opposite. It's focused on helping itself (self-improvement, something everyone should have), but sometimes to the detriment of others.
Time is once again fast or slow, like Gravity. Unlike Gravity though, I don't believe Detachment fits it very well. So I'd say it's either Patience or Determination.
Water is actually a tough one. I'd say it's Loving or Nurting, which unlike Light (which is concerned with itself), is benevolent toward others, but in Elements only one Water card fits that description (Purify). Looking at its cards, Water actually turns out to be quite the mean element. I'm not sure what to think here.
