The order is the key there. SoW, then Quint = physical damage = vampiric damage
Quint, then SoW = spell damage = no vampiric effect

So you can choose whether to bypass most shields or gain HP from the normal attacks.

Drain life heals the owner for each damage dealt to the opponent. Vampire does the same through physical damage. SoW would make the damage spell damage, not physical damage, thus not healing the owner.

Vampire heals through vampiric damage which is also physical damage.
Drain lifes heals through spell damage.
Spell damage, when given to a creature, gets rid of previous forms of damage.

Its not the fact that spell damage can't heal the owner and damage an opponent, but SoW getting rid of previous forms of damage. None of this is made up for this specific situation either because you can confirm what SoW does with poison creatures and the card poison.

Is there a way to construct an arena deck which uses Aflatoxin on a rustler, and then benefits from Empathetic Bond?  I have tested the deck three times, and all three times the AI targets opposing creatures, making the thrust of the deck useless.

No. The AI will not target its own creatures with Aflatoxin unless they have negative attack (antimattered).
