Okay so I want to know how the order of attackers are done? If I have 2 creatures in play. a 7/4 and a 3/5 creature, and I attack the enemy's creature who is a 3/2 with a gravity pull on it... would the AI make my 3/5 hit it which leaves my 7/4 to hit the player or vice versa?

And also, cards such as 'Rain of Fire' or other similar type spells counts as 'targeting' apparently and would not zap creatures that are immune to targeting... so is this working as intended? 'Cause I card doesn't require targeting to begin with.

The attacking order of creatures is decided by when they came into play. The creatures that were summoned earlier will attack sooner than ones recently put into play.

Targeting Immortal or Burrowed creatures is a very strange matter to me. They are subject to shield effects (damage reduction, freeze chance from Ice/Permafrost Shield, time bubbles from Procrastination/Turtle Shield, damage from Fire Shield/Buckler) but they can't be affected by spells.

That is incorrect. There is a set order depending on the position on the field. The exact middle card attacks first and so on with the order going with the order of when they would come into play but any disturbances to the order or replacements are not considered, i.e., if your middle creature dies and and you play a new creature (which would take that spot), that new creature will attack first even though you have other creatures that have come into play earlier.

You learn something new everyday :)

Guess I'll have to keep that in mind when I'm using the Nymphomania deck.

Exact attack order is:
For the middle row with cards labeled 1-7 from left to right, the order is this:

4, 6, 2, 3, 5, 7, 1
If, from left to right in both the top and bottom rows is numbered from 1 to 8, then after the middle row is done, it goes 2, 4, 6, 8 on bottom, 1, 3, 5, 7 on top, 1, 3, 5, 7 on bottom, then finally 2, 4, 6, 8 on top. That is 23 creature slots in total.
