Wings is good for stalling, yes. But keep in mind that all of the FGs have means of getting past shields.
If you look at their decks (http://elementscommunity.org/forum/index.php/topic,7919.0.html), every single one of them can get past wings in some fashion. Maybe Decay and maybe Dream Catcher won't, but that would be it, and that's a very tenuous maybe.

... Let's take a look. Assuming that you use Wings,
Akebono- Overdriven Dragons + Chimera will crash through anything you put up.
Chaos Lord- If the army of mutants doesn't kill you first, he'll outlast you through his Diss. shields.
Dark Matter- Chargers + Archangels will break through wings.
Decay- 12 Siphon Lifes- he'll deck you out if they don't kill you.
Divine Glory- Flying Weapons get through Wings, and he has explosions anyway.
Dream Catcher- Butterfly Effect.
Elidnis- Elite phase dragons, forest spirits, massive healing.
Eternal Phoenix- Massive rush potential, phoenixes are airbourne.
Ferox- Massive healing, jade dragons
Fire Queen- all her creatures are airbourne, she also has mass healing.
Gemini- Momentumed Recluses are 8|3.
Graviton- Otyughs will snap up your pegasi, explosions+momentums do the rest.
Hecate= Rage pot+ TU + Voodoo Doll = direct damage. In addition, Steal.
Hermes- Fire bolts and explosions
Incarnate- Vampires are airbourne.
Jezebel- steal
Miracle- See Fire Queen
Morte- poison+Archangel
Neptune- Massive CC, Deckout.
Obliterator- Massive Rush
Octane- Shields are worthless
Osiris- trebuchets- 20 HP scarabs do hurt.
Paradox- Deja Vu is airbourne.
Rainbow- Unpredictable, but fast.
Scorpio- Poison + control
Seism- Quanta Lock.
Serket- Serket will have enough poison to kill you faster than you get out wings.

They can get back the Wings, I'm not denying that. But against some of them the Wings are a very good defence.

Wings are actually really really good against Serket. Easily one of the best counters possible.
It's strange how you just completely skipped Lionheart in your FG analysis. His eternies (flown) and scarabs can get past, but that's it.
You also skipped Destiny, but since her creatures are random, the effectiveness of wings depends on luck.
Wings stop all of Seism's creatures except for his dragons. It won't stop him, but it'll definitely slow his damage.
Wings stop all creature and weapon damage from Decay. It won't help too much since he doesn't even have that much damage anyway.
Only Scorpios 2 Ice Dragons can get past wings, but he has a lot of poison, so it'll only slow him down a bit here.

Wings aren't that bad, but I'd personally only use them against Serket.
