I just don't like this idea because of the general programming rule regarding the maximum health of creatures (which is 499 approximately). I get what you're trying to do with the mechanic, but with cards like Chimera out (which merges all creatures, and thus, would take in all of their HP in for consideration), the infinity health issue would not only be incredibly broken, but awkward to even implement.
I'd suggest to just allow the creature to resist the first spell targeted onto it, making it immune to cards like Fractal or Quintessence for combos (especially if it's a passive ability... then it'd be fun.)
Also, YoYoBro address the AOE issue - even though it's not -directly- targeted, one could imagine that AOE effects (like Flooding to Pandemonium) would not affect Cherub in either state, which would be a serious problem in the thematic aspect of it. The good thing is, the mechanic automatically avoids the Gravity Pull spell, but only half-way (Chimera problem again).
