The random targeting for Holy Light / Holy Flash may include both players and all creatures, but the +1|+1 will only be granted to creatures owned by the same player that cast Holy Light / Holy Flash. Also, the random targeting will affect both players, but the opponent will only be able to trigger the +1|+1 on their Holy Flash / Holy Light if they also control a Knight / Champion respectively. E.g. if you have a Knight of Apollo and your opponent casts Holy Light and it targets a guardian angel that they own, then that creature will only get +1|+1 if the opponent also owns a Knight of Apollo.
In other words, the Knight / Champion disrupts targetting of holy light / flash for both players, but it only provides its owner with the added bonus.
Lastly, Knight of Apollo will not affect Holy Flash and Champion of Apollo will not affect Holy Light.
