'a random enemy' can be a creature or a player. An immaterial creature cannot be poisoned.

The poisoning part is passive, the sacrificing part is active.

As death's champion, this card does all what death can do:
slow cc, poison, on death effect, cause more death effects, and deal damage.

I originally wanted to make the active usable multiple times per turn, but it'd be hard to balance.
Together with soul catcher and aflatoxin/boneyard, it'd make a very strong combo, leaving a cost that'd make the card otherwise not useful.
Plus, there was no more space on the card.

Very nice! A worthy champion for death.

One quibble I have is that it might be a little too expensive with the current stats, if we compare to other growth creatures in the game. Lava golem and forest spirit both use off-element costs and 1 :rainbow, while this is in-element and has the chance to add a poison stack as well, so the 'growth' can be modeled as a +3|+2. With an in-element growth the increased cost is justified somewhat, but then needing the creature to sacrifice slows this down by quite a bit even if we assume +3 (2ATK and 1 poison). Then again, I haven't really thought about the implications of auto-poison/infect on-death, so it may be fine as is.

If you are sacrificing a creature doesn't it die? If it dies then adding to it's stats is pointless, unless it dies at the end of the turn upon attacking, in which case the attack buff makes sense. Adding HP to a creature that is going to die before the opponent has a chance to hit it makes no sense to me. Am I just missing something? ?_?

It means IT gets stats, not the creature it sacrifices
