Not sure if this is a bug or a recent update but two times today, when I hatched a mutant with hatch, it came out as a normal creautre (not a mutant)

Not a bug.  The hatch ability is just like the hatch on Fate Egg.  It does not make mutants, it just becomes a different creature.

Not really cos in between those 2 mutations, i actually got a mutant through hatching twice so, sequence: hatch into norm creature, hatch into mutant, hatch into mutant, hatch into norm creature

And what's more the second norm creature hatched from a mutant graboid (burrowed) and the creature it hatched into was a burrowed blue nymph  :P

Creatures will retain certain statuses after hatching, such as burrowed, invulnerable, and momentum.  If it has the word below the creature then it is a mutant.

EDIT:
Ok.  You were right.  I had a mutant with hatch ability that changed into another mutant.  I thought they always changed into regular creatures.  Weird.
